Customizer can do anything that is doable within the chroot environment. That includes adding [your own kernel] (https://help.ubuntu.com/community/Kernel/Compile), packages and other customizations. Remastering is possible from both command line via Terminal and graphical interface via Xephyr. See summary of features in Customizer.
Customizer is for users who want to create Ubuntu-based remix for personal use. To create a distribution, branding shall be removed by user themselves. For users wanting to install applications which are not pre-installed on official ISO image, or to whom just want to experiment in building a remix, Customizer comes handy.
Short answer is, nowhere. Because remastering is such a niche interest, the so-called "help" is often found as outdated Wiki pages or single post on some blogs. You may try to ask at Ubuntu Forums, Ask Ubuntu, Super User and such. Prior to remastering, users are advised read the First guide and Tutorials to get the basic idea.
We had a forum, twice. First on Sourceforge.net (until late-2011), then organized by a contributor on Freeforums.org (early-2014). Not much activities, then had to be closed. For now, we have only GitHub Issues for bug reports and questions related to Customizer. You can submit your suggestion for discussion place too.
Blaming won't help and remastering isn't without problem. First of all, you should double-check your working steps and environment. Look at common mistakes, if you made any. When asking help, explain properly with details and submit issue by following this guideline and steps.
