Upgrade Elasticsearch client to 8.6.1 (#1683)

With this commit we upgrade the `elasticsearch-py` client from 7.14.0 to 8.6.1, and install `elastic_transport` 8.4.0, a new library that is responsible for the underlying network requests to Elasticsearch.
