Creates invalid syntax in the presence of raw strings

For me, it changed the valid TOML

[tool.ruff]
lint.flake8-copyright.notice-rgx = 'SPDX-License-Identifier: MPL-2\.0'

into the invalid …MPL-2\.0" (\. is not a valid escape sequence in a ""-string)

pyproject-fmt needs to preserve raw strings everywhere.

I have the same issue as I'm trying to configure Ruff to exclude my cookiecutter root folder like in astral-sh/ruff#7959

That issue has 2 workarounds here and here for others facing the same problem. I ended up tweaking the first one to:

extend-exclude = [
  "[{]{2}cookiecutter.project_slug[}]{2}/*",
]
