What

This library is using a super out of data version of https://github.com/storacha/go-ucanto -- let's update to the latest version

Step 1: Update to latest go-ucanto (0.3.0 once it's published)
Step 2: Fix any issues
Step 3 (optional): update the store protocol implementation to use more current patterns for handling receipts (see indexing service and storage node repos for examples)
