Documentation Updates

Hey all,

I’m coming in this evening with an exciting update! Over the weekend I was working on a new set of documentation updates.

1. Documentation for v3.x has been started and is now available at https://docs.cachethq.io/v3.x. This is very much a WIP, but I spent a lot of time ensuring we have screenshots, accurate documentation and an install guide 👀
2. Documentation for v2.x has been restored and is now available at https://docs.cachethq.io/v2.x. 2.x will no longer receive any documentation updates.
3. The API documentation is now coming together at https://docs.cachethq.io/api-reference/introduction. Note that this is also a work in progress. I've been updating the Cachet core with controller annotations so that I can generate this automatically with Scribe. It's baller.
4. A big thank you to Mintlify for hosting our documentation as part of their open-source offering.

There's still a lot of work to do in the documentation, including writing documentation for features that don't yet exist in v3.x.

Please let me know if you have any feedback. Also, you can contribute to the documentation yourself at the cachethq/docs repo.
