Improve logging for E2E test failures

Is your feature request related to a problem? Please describe.

• Recently we started dumping the last 500/1000 lines of journald logs from K3s from each VM when E2E fails. This is better than no logs, but reading logs in GHA that are thousands of lines is difficult.

Describe the solution you'd like
Instead of dumping logs in STDOUT, upload the logs as artifacts that can be downloaded as txt files and viewed anywhere.
