I think Open3d was what was keeping us at Python 3.10, and since Open3d v0.18 it now supports Python 3.11.

So we should see if we can finally use that too.

Windows uses 3.11.
Need to check Mac brew installer.
For Linux I think it's best if we stay with whatever Ubuntu 22.03 uses.

Updating the brew formula (in https://github.com/cwi-dis/homebrew-cwipc) should wait until the 7.5 release is out.
