I was part of the original team (put together by Ingo Ruhnke in Linux Game Tome), and I was very active (the original level editor was developed by me, and I helped with a bunch of other stuff - it was a big part of my life for a couple of years). It saddened me that I was not there. I was known as "Ricardo (blacksheep) Cruz".
Also I notice there is little information on the website about the history of the game - it would be fun to add some. Maybe on the Discover webpage of the website: https://www.supertux.org/discover.html
Ingo Ruhnke put together a team in the Linux Game Tome forum (now defunct), also known as, HappyPenguin. He called it the "Game of the Month".
The development was initially intended to last one month, but it took substantially more. The team then moved on to other games, namely LinCity and TuxKart (renamed to SuperTuxKart).
