[ecosystem] Set up EVM explorer for Nibiru on mainnet

The Ask

The block explorer for Ethereum-based transactions on Nibiru is created by Routescan. As of today (2025-02-04), the public testnet is deployed at the URL intended for mainnet:

Mainnet (Cataclysm-1)	Not yet live
Testnet (Public Testnet)	evm-explorer.nibiru.fi

After entering the Mainnet Beta stage of the V2
upgrade, which is expected in the next 1-2 weeks, Cataclysm-1 will be live with V2.

We then need to configure the DNS so to make the mainnet use the production URL and set the testnet to a new endpoint.
