Had the same problem and fixed it by installing the missing fonts with
apk add libreoffice ttf-freefont ttf-opensans ttf-ubuntu-font-family ttf-inconsolata ttf-liberation ttf-dejavu on alpine or
apt-get install libreoffice ttf-freefont ttf-opensans ttf-ubuntu-font-family ttf-inconsolata ttf-liberation ttf-dejavu on ubuntu

This change did solve this issue described above but I am asking this next question out of curiosity.

When I was using LibreOffice 6.1.5.2 10(Build:2) this was working as expected without this encoding issue.

However, due to security vulnerabilities we updated to LibreOffice 7.3.6.2 30(Build:2) and this issue started.

Were font imports made optional in a newer release?
