React has released a stable version 19 to upgrade to, and astro has a couple updates too worth implementing.

There's some lightly blocking v19 react version package dependency mismatches to resolve with some of the shadcn-ui package dependencies.

Upgraded to the latest Astro version.

Waiting on a stable release by shadcn-ui before updating to React 19: shadcn-ui/ui#6585
